I usually throw together an oil and vinegar dressing, but champagne vinaigrette has piqued my curiosity. Going to have to try that.

- Here is the recipe I use. You can modify it to your own taste. Some people like to add a little strawberry puree or fresh basil. Or both!
  Prep Time: 2 minutes
  Ingredients:
  1 cup mild olive oil
  1/4 cup champagne vinegar
  1/2 cup champagne
  Salt and freshly ground pepper
  Pinch sugar, optional
  Preparation:
  Whisk together olive oil, champagne vinegar, and champagne. (You may use a blender for this if you wish.) Season to taste with salt and pepper. If the vinaigrette tastes too sharp, add a pinch of sugar and whisk until dissolved.
  
  Refrigerate any leftover salad dressing and use within 1 week.
  
  Yield: 1-1/2 cups, enough for 6 to 8 salads

- If you don't want to waste a whole bottle of champagne just go to your local wine shop. I oftentimes will do this and just pick up a split of Korbel.

- It is some kind of F-A-N-T-A-S-T-I-C !!! My sweetie makes it. She puts big and small chunks of blue cheese throughout the dressing. Blue cheese and Roquefort dressing are my favorites.

Bleu Cheese and then I put extra bleu cheese curds on top of it. My kids tell me it smells awful! But I think it tastes yummy.
